SUMMER IS FOUR PILLARS

Four Pillars, Yarra Valley gin-making legends and reigning world’s best gin makers, will pop-up in our courtyard and transform our Whiskey Room into The Juniper Saloon. 

This month-long celebration of Australia’s best family of gins kicks-off on 21 November, as a nod to Australian Gin Day. So you’ve got 24 hours and then a whole delicious month to discover the best of Australia’s homegrown gin.

Gin is a complex, diverse, delicious spirit made from distilling grain spirit with juniper berries (that’s what makes it gin) and a whole range of other botanicals from coriander seed to cardamom. At Four Pillars they also use native Australian botanicals like lemon myrtle as well as whole fresh citrus and even virgin olive oil to give each of their gins their uniquely aromatic characters. 

Four Pillars grew from humble beginnings to being named the world’s leading gin producer at the International Wine and Spirit Competition 2019 in London. Their Laboratory just up the road from The Clock in Surry Hills is the place to experiment and play with this top drop. Take a maker masterclass or learn to mix your gin-centric cocktails.
